Cottage Cheese Grilled Italian Ciabatta - sizzling filling with onions,tomatoes,spiced with green chillies.
2- 3 Ciabatta
1 packet Cottage cheese
1 large Onion finely chopped
1 or 2 large Tomatoes finely chopped
Green chilies to your taste finely chopped
2-3 tbsp Coriander finely chopped
1/2 - 1tsp Turmeric
1 tsp or to your taste Garam Masala (optional)
Salt to taste
1 tbsp Olive oil
Butter for spreading on inside of Ciabatta
Cooking mist spray for grilling
Place the cottage cheese in a colander and allow water to drain.
Heat oilve oil in a pan, add the chopped onions and chilies, fry until brown.
Add the cottage cheese and chopped tomatoes. Season with salt, turmeric, garam masala and add chopped coriander. Stir well and leave the mixture to cool slightly.
Cut the Ciabatta in half and spread butter on the insides. Now place Ciabatta on the grill, spread the cottage cheese mixture evenly and place the other half Ciabatta on top. Spray cooking mist on top and grill till nice and crisp.
