3 full tubs x milk powder (using the double cream tub to measure, I use Anchor Milk powder in Dubai)
1 full tub x sugar (using the same tub to measure)
1 tsp cardamom
1 x 230gm milk cooking chocolate.
2 tbsp ghee
Line a dish with ghee, ready to spread the barfi mixture.
In a microwave bowl mix together milk powder, double cream and sugar.
Place in microwave cook on medium heat for 2 minutes, remove and stir, again cook for 2 minutes, add the saffron and cardamom and repeat the cooking for 2 more times. You will see the colour and consistency changing and it will start leaving the sides of the bowl.
I like my barfi to be light brown in colour some may prefer slightly lighter.
Place the barfi into the prepared greased dish and spread out evenly, you may use back of a metal spoon to make it even, you can also add a little ghee to help smooth out.
Melt the cooking chocolate, pour over the barfi and allow to set. Once the chocolate has set cut the barfi into equal square pieces.
Store in a container and place in fridge.
