Heat oil in a pan add cumin seeds and then add the tomatoes. To this add spices of your choice, salt, chilli powder, roasted ground cumin powder, black pepper, garam masala, sugar green chillies and coriander chopped finely.
Simmer for 5-8 minutes.
For the Paneer:
Grate the paneer, to this add seasoning of your choice: salt, black pepper, chilli flakes, fresh coriander and keep aside.
Shallow fry the sweet potatoes or you can put them on a griddle. Keep aside.
Pre-heat oven 175 Degrees
In an clear ovenproof dish, layer with the sauce first spread on the bottom, then a layer of the sweet potatoes, followed by grated paneer and repeat again with the sauce, sweet potatoes and grated paneer then garnish with the capsicum rings and fresh coriander.
Bake in the oven for 20-25 minutes. Leave to stand for 10 minutes.
