MINALS JUMEIRAH SPICE
3 sheets filo pastry
1 cup Redcurrants (some for garnishing too)
1 tbsp sunflower oil
1 cup low fat Greek yogurt
1 tsp icing sugar for garnishing
You can have extra icing sugar to mix with Greek yogurt if you desire!
Preheat the oven to 200 degrees.
Cut the filo pastry into approx 10cm squares
Brush each filo square with oil and arrange in a patty tray, place 3 sheets in different angles to form star shaped baskets as above photos.
Bake for 6-8 minutes until golden and crisp, filo pastry does cook very quickly so keep checking the oven. Leave to cool before filling.
In a bowl add the Greek yogurt (icing sugar if you want it a little sweet as per your taste) then stir in the redcurrants.
Spoon the Greek yogurt mixture into the cool filo baskets. Arrange on a serving plate individual or in a platter. Garnish each basket with redcurrants and icing sugar.
