DATE & OAT LAYERED CRUMBLE CAKE
Layer of crumbly golden oats on the bottom, sweet date mixture and finishing with walnuts and cinnamon on top. Serve sliced up with a cup of chai for afternoon tea or a dessert served with ice-cream or warm custard.
INGREDIENTS:
1 1/2 cup All purpose flour
1 1/2 cup Oats
200 gm soft butter
1 cup Dates (pitted)
1/2 cup Brown sugar
1 cup water
Pinch of Baking soda
1-2 tsp Cinnamon powder
Walnuts chopped to sprinkle on top
METHOD:
Preheat oven 180 degrees. Line a cake tin approx 12" x 5" and keep aside.
Mix together butter, flour, oats and 1 tsp cinnamon powder until it resembles breadcrumbs and divide mixture into two.
To make date mixture, in a pan add the dates, sugar, baking soda and water and heat until all is melted into a smooth date mixture.
Take one part of the crumble mixture and layer it at the bottom of the lined cake tin, press it down firmly.
Top it with the date mixture and spread evenly.
Add the second layer of the crumble mixture and again repeat with spreading the date mixture.
Finally sprinkle the walnuts all over the top covering it completely and sprinkle cinnamon on top.
Bake in the oven for 35-40 minutes.
Once cooked remove from oven and allow to cool before slicing.
