Whole roasted cauliflower - carve to serve!

INGREDIENTS:


1 Whole cauliflower head

3 Garlic cloves

1 Ginger piece 1/2 inch

4-5 Green chilies

1 Tomato fresh

1 Onion large

1 tsp Garam masala

1 tsp Chili flakes

1 tsp Black pepper

1-2 tsp Red Chili powder

2 tsp Coriander powder

1 tsp Kasthuri methi

1/2 tsp Tandoori powder (optional)

Salt to taste

1 cup Strained Tomatoes (boxed) may need more depends on the size of the cauliflower head

2- 3 tbsp Olive oil



METHOD:


Preheat the oven to 400°F/ 200°C.

  1. Prepare the cauliflower by removing the leaves. Wash and dry the head of cauliflower, then cut the stalk so the cauliflower sits flat, careful the head stays intact.

  2. In an electric blender add 3 Garlic cloves,1 Ginger piece 1/2 inch, 4-5 Green chilies,1 Tomato fresh, and 1 Onion large

  3. In a small bowl, stir in the above mixture and add all the spices, 1 tsp Garam masala,1 tsp Chili flakes,1 tsp Black pepper, 1-2 tsp Red Chili powder, 2 tsp Coriander powder,1 tsp Kasthuri methi, Salt to taste. Add 1 cup Strained Tomatoes (boxed) may need more or less depends on the size of the cauliflower head, finally add the Olive oil and stir.

  4. Rub the mixture on the inside of the cauliflower then turn it over and brush the mixture all over the cauliflower. Place it on an oven dish and cover with foil and roast in the oven for 1 hour, or until the cauliflower is soft. Remove the foil and cook further until the outside becomes lightly browned

Serve carved into slices.
