AUTHENTIC GERMAN POTATO SALAD

1 kg potatoes
250 ml vegetable soup
4 tbsp spoons vinegar
1 teaspoons of strong mustard
1 bunch of spring onions
2 small cucumbers
3-4 tbsp spoons sun flower oil
salt & pepper to taste
1.Wash the potatoes, bring water to boil in a pot and add potatoes into the pot so that potatoes are fully covered. Add 1 tbsp spoon of salt and let them boil until just ready (not too soft). Let them cool a bit and peel while still warm.
2.Head the vegetable soup and mix with vinegar, mustard salt and pepper. Peel onion and chop into small pieces. Cut spring onions into small pieces. Cut cucumber into half, take seeds out with a spoon and chop the cucumber into small pieces as well.
3.Cut potatoes into slices (don´t worry if they fall into little pieces) and put into a big bowl.
Cover with the warm vegetable soup/vinegar etc. and mix. Let it rest for some few minutes.
4. Finally add oil, onions and spring onions and cucumber. You can and add more salt or pepper to your taste.
