FALAFEL with Tahini Dip

Falafel is a deep-fried ball, or a flat or doughnut-shaped patty, made from ground chickpeas. It is a well-known Middle Eastern dish.


INGREDIENTS:

250gm chickpeas soaked overnight

1 large onion, roughly chopped

3 cloves garlic

1 small bunch of chopped parsley

2 tsp cumin

1 tsp coriander powder

1 tsp black pepper powder

1 - 2 tbsp olive oil

1/4 tsp bicarbonate of soda

vegetable oil for frying


METHOD:


  1. In a food processor combine all the ingredients except the olive oil and the bicarbonate of soda. Pulse until the ingredients are mixed, slowly add the olive oil. Continue to mix in food processor until the mixture is grainy or little chunky not too smooth.

  2. Remove mixture and place in a bowl, add the bicarbonate of soda and mix.

  3. Wet the hands slightly, take a small amount of the mixture and roll into a shape of patties. Size and shape can be to your preference.

  4. Deep fry in hot oil until 2-3 minutes on each side until crispy golden brown.


Tahini Dip

1 small cup of tahini, to this add lemon juice until it becomes hard, then add 1 tbs of yogurt and mix until it becomes creamy, if it is still dry add more yogurt, lastly add salt to taste. Garnish with coriander.
