INGREDIENTS:
1 fresh coconut or shredded shop bought
1 small onion sliced
1 small onion diced
garlic and chilies to your taste (this dish tastes delicious when it's spicy)
1 -2 tsp red chili powder
1-2 tsp salt
1 tsp black pepper
1 lime
1 tbsp oil
1 tsp musturd seeds
8-10 curry leaves
METHOD:
Scrape the coconuts ( I am using a coconut shredder from Sri Lanka in the video)
If using shop bought that is also fine, place coconut in a bowl and add diced onion, chili powder, salt, black pepper, squeeze the lime juice and mix altogether.
In a pan heat the oil, add mustard seeds and wait for them to pop, then add curry leaves, sliced onions, garlic, chilies, saute for a few minutes and then add all the coconut. Cook for 3-4 minutes.
