With warming flavours, urad dal made for a perfect vegetarian meal with parathas or naan.


½ cup Black gram dal (Urad)

2 tsp Salt (or to your taste)

4 – 5 fresh curry leaves

3 tsp Red chilli powder

2 Dry red chillies

2 inch piece Ginger, chopped

2 tbsp Ghee or (3 tbsp of Butter)

1 tbsp Oil

1 tsp Cumin seeds

6 cloves Garlic chopped

1 large Onion , chopped

2 Green chillies, slit

2 medium Tomatoes chopped or 1 cup tin tomatoes

2 tsp Garam masala powder

100-150ml Cooking Cream ( to suit your taste)


  1. Wash and soak black gram dal urad. Pressure cook urad in three cups of water for four whistles. If you are boiling in saucepan it could take 30-40 mins approx.Open the lid and see if the dal is totally soft.

  2. Heat butter and oil in a pan. Add cumin seeds. When they begin to change colour, add curry leaves, ginger, garlic and onion and sauté till golden. Add slit green chillies, tomatoes and sauté on high heat.

  3. Add the red chilli powder and dry red chillies and sauté till the tomatoes are reduced to a pulp. Add the cooked dal along with the cooking liquour (water the dal was cooked in.) Add some water if the mixture is too thick.

  4. Add garam masala powder and adjust salt. Add cream, leave a little for garnishing.

Simmer on low heat till the dal is totally soft and well blended.

Serve hot garnish with circle of cream.
