MUJADARA - LENTILS WITH RICE & FRIED ONIONS
INGREDIENTS:
1/2 cup Brown lentils
1 cup rice (Basmati or similar)
6-8 small onions sliced (the more onions the better the dish tastes!)
3 cups water
1tsp cumin
1⁄4 cup oil
salt and pepper
METHOD:
Wash lentils and put in large pan with 2 cups cold water. Bring to boil, lower heat, cover and simmer for 15 minutes.
While lentils cook, soak rice for about 15 minutes.
Drain rice well and mix with the cooked lentils and 1½ cups hot water. Add cumin, salt and pepper. Cover and simmer until all water is absorbed, about 15 minutes or longer.
While rice and lentils cook, fry onions in oil until golden brown and keep aside.
Garnish the cooked mujadarah with lots of fried oinions
