SAMA PANKI - Faraar/Fasting dish cooked between banana leaves
Serve garam garam Samo Panki to your family and friends this Navratri or any fasting day!
INGREDIENTS:
6 - 8 cut Banana leaves (according to your frying pan size)
2 cups Sama flour
3-4 tbsp Arrowroot flour
1/2 cup rajagra flour
3/4 cup plain yogurt (sour)
1 tsp cumin seeds
salt to your taste
Finely chopped coriander, chilies, ginger (to your taste)
Oil for greasing inside of leaf but not required outside if using non-stick pan
METHOD:
In a bowl mix together all the flours, yogurt, cumin, salt and coriander, green chilies, ginger
Cover the bowl and leave this mixture for at least 1 hour to ferment in a warm place.
Take one leaf at a time, grease the inside with oil using a brush and then place a small amount of the above mixture spread evenly to make a thin layer and fold the other side of the leaf over to form an envelope.
Heat a non-stick frying pan and place the banana leaf on it, you may drizzle a little oil if you wish or simple cook on both sides till for 3-5 mins. Lift one side of the leaf to peel the Sama Panki.
Panki tastes best when served hot immediately from the pan with a chutney/chili sauce.
