QUINOA KHICHDI WITH MOONG DAL & VEGETABLES - Healthy meal for all the family!

Serves 6


1 Cup mixed coloured Quinoa 1 Bowl mixed vegetables 1\4 cup moong dal 1 tbsp oil

1 tbsp ghee

6-8 fresh curry leaves 1 small chopped onion 2 - 4 green chillis sliced finely as per your taste 2 tsp crushed ginger 2 tsp crushed Garlic 1/4 tsp turmeric powder 1-2 tsp chilli powder (add more if you enjoy spicy flavour) 1 tsp cumin powder 1tsp coriander powder 1/4 tsp clove powder 1/4 tsp cinnamon powder 1 1/2 tsp salt pink Himalayan salt /or normal salt Vegetables of your choice we used French beans , peas, sweet corn, broccoli, cauliflower, carrots and courgettes


  1. Soak moong dal for 15 to 20 min in cold water

  2. Wash quinoa and leave in the water until ready to use.

  3. Prepare the vegetables by chopping all to the same size

  4. Heat oil & ghee in a pan, add the cumin and curry leaves let it sizzle and then fry the onion for few mins until onion is softened

  5. Now add garlic, ginger and green chillis

  6. Stir for 1 min, then add turmeric, chilli powder, coriander powder, clove powder, cinnamon and salt to taste.

  7. Add the carrots and beans in first let it cook for 2 mins then add rest of the vegetables

  8. Cook further 4/5 min

  9. Add the moong dal then the Quinoa, mix well then add 2 cups water let it cook for 15/20 min

  10. Mix well garnish with coriander

  11. Serve hot, can be served with your favorite Raita too!
