MANGO AND RASPBERRY GRATIN
Heavenly king of fruits mango dessert!
2 Mangoes medium sized chopped into small cubes (I used Alphonso Mangoes)
150ml Double Cream (I used Elmlea Double Cream)
150gm Mascarpone cheese
200ml Custard made with sugar or sweetner of your choice (Custard should be of thick consistency)
2-3 drops of Vanilla essence
Place the cubes of mango and the raspberries in a shallow dish that is ready to serve at table if making individual portions.
Place the double cream in a bowl and whip until it forms soft peaks. Then slowly add the mascarpone cream,custard and vanilla essence, continue stirring until all blended and a smooth texture.
Spoon the cream mixture over the prepared mango and raspberry dishes and spread and smooth out.
Place under grill for 4-5 minutes until lightly browned and bubbling.
Serve hot. Heavenly king of fruits mango dessert!
