Cashew Vegan Mac & Cheese

Vegan Mac & Cheese with Creamy Cashew Sauce

Velvety creamy cashew sauce


INGREDIENTS:


4 cups Gluten free macaroni or regular macaroni

2 cups Cashews soaked overnight

a little lemon juice and salt to add to the soaked cashew when blending next morning.

Add below ingredients to your taste

Salt

Pepper

Green chillies

Broccoli florets

Cilantro

Fresh herbs


METHOD:


  1. Boil macaroni until and set aside

  2. Make your cashew cream cheese by placing the soaked cashew in the blender, add the lemon juice and salt a bit at a time to make the blender go round. You can also add pepper and chilli and give it a good blend.

  3. If using broccoli break your broccoli florets into small pieces and steam them

  4. Place boiled macaroni in a baking dish, spread the broccoli all over the macaroni and pour the cashew cream on top and sprinkle oregano, chilli flakes, cilantro on top and finish off with gluten free bread crumbs (optional)

  5. Bake in a pre-heated oven for 20 minutes or until golden brown.
