Filo Pizza with Tomatoes, Feta & Basil... crispy, light & flaky

This light, crispy crumbly base filo pastry pizza makes a great treat for the family and for entertaining!


8-10 (14'x9') approx, Filo pastry sheets, thawed

4-5 thinly sliced plum tomatoes (place these on a paper towel to absorb excess water)

1 bunch spring onions sliced thinly


Fresh basil leaves



black pepper

chili flakes/ fresh green chillies

1/2 cup mozzarella cheese grated

1/2 cup feta cheese crumbled

Spray cooking oil


  1. Preheat oven to 220 degrees

  2. Grease a baking tray. Take one sheet spray with cooking oil and place the next sheet on top, repeat this two or three more times.

  3. Now spray the top filo sheet with oil, then sprinkle the mozzarella cheese and feta cheese on top leaving a small 1 inch border.

  4. Arrange the tomato slices, sprinkle the onions, olives, black pepper, chilli flakes or green chillies and oregano.

  5. Bake for 15-20 minutes until crispy golden.

  6. Serve hot! Sprinkle fresh basil leaves and salt.
