Soft healthy parathas/ indian bread suitable for fasting either with plain yogurt. tea or with a fasting curry.
Makes approx 15 paratha
INGREDIENTS:
2 -3 cups fasting flour (can be found ready mixed if in UK and at Al Adil in Dubai
or you can mix together samo/ flour, rajagra flour, sabudhana flour equal portions
1 small potato boiled and mashed
Salt and ground black pepper to your taste
1-2 tsp Cumin seeds
2-3 tbsp oil and extra for frying
chillie paste, fresh coriander
Extra fasting flour for rolling out the paratha
METHOD:
In a bowl mix all the above ingredients and bind into a dough adding a little water at a time.
Divide dough into equal portions.
Dust the rolling area with a little flour and dip the paratha dough in the flour and roll out to 6 to 7 inches diameter.
Heat a tava/frying pan and cook the paratha with a little oil spread on both sides when turning, cook until golden brown on both sides.
Continue with the rest of the dough and stack the paratha once cooled in an airtight container.
They taste best when served hot!
