SRI LANKAN EXOTIC VEGETABLE RICE
Rice dish colourful and fragrant with healthy vegetables, delicious to eat on its own or part of a meal.
1 cup Cooked Rice
1/2 cup Green beans - 2cm long Diagonal cutting
1/2 cup Carrots - 2cm long Diagonal cutting
1/2 cup Capsicum red - 2cm long Diagonal cutting
1/2 cup Leeks chopped
1/2 cup Cabbage chopped
2 cloves Garlic - sliced
Handful of Curry leaves
1/2 cup roasted cashew nuts
2 tbsp Ghee
Handful of raisins
Salt, turmeric and chili flakes to your taste
In a pan heat ghee and add curry leaves, garlic, green beans and carrots. Add salt and turmeric to your taste and allow to cook on medium heat.
Once cooked add cabbage, leaks, raisins, cashew nuts chili flakes and cook for a further few minutes then add the cooked rice, stir and cook for further 2 minutes.
Serve hot to enjoy the aroma and flavours of this rice dish!
