CUCUMBER CUPS & MOONG SPROUT CHAT


CUCUMBER CUPS, GREEK YOGURT & MOONG SPROUT CHAT - vegetarian fusion appetizer

Serves 4

INGREDIENTS:

1 cup Greek yogurt

10 -12 slices of cucumber, approximately 0.5 cm in thickness

1 cup moong sprouts or 1/3 cup uncooked green moong (soak for 6 – 8 hours, drain and keep covered for another 12 hours)

1 small tomato finely chopped

1 small onion, finely chopped

1 green chilli, finely chopped

1 tbsp chopped garlic

2 tbsp fresh coriander, finely chopped

1/2 tsp red chilli flakes

½ tsp chaat masala

½ tsp jeera powder (cumin powder)

Salt to taste


METHOD:

  1. In a bowl add moong sprouts, tomatoes, onion, coriander, green chili and red chili flakes, jeera powder and slowly add and stir in the Greek yogurt .

  2. Spread the cucumber slices on a serving dish and with a teaspoon place the yogurt mixture on the cucumbers.

  3. Garnish with chaat masala, chili flakes and fresh coriander. Serve chilled.
