PANEER PAV Baked not fried

PANEER PAV - Baked not fried, makes a scrumptious hot snack for anytime of the day!


Makes 6 - 8 portions

INGREDIENTS:

White or Brown French baguette

4 medium potatoes, boiled and diced

250gm Paneer (crumbled)

1-2 garlic cloves, finely chopped

1 tbsp of ginger finely chopped

2-3 green chillies, finely chopped

Coriander finely chopped

8-10 Curry leaves

1 tbsp oil

1 tsp Mustard seeds

1/4 tsp Turmeric

1/2 tsp Chilli flakes

Salt as per taste

Fresh lemon juice to your taste


METHOD:

  1. Pre-heat oven 180 degrees

  2. In a pan add the oil and mustard seeds, when they begin to crackle add the curry leaves, garlic, ginger, chillies and potatoes. Saute for a few minutes then add the turmeric, salt and chilli flakes.

  3. Add the crumbled paneer, coriander and lemon, give it a good stir, take pan off the heat.

  4. Slice the baguette and toast slighly then add the above Paneer and Pav mixture and bake for approx 5 minutes before serving.

  5. Serve hot, great snack for anytime of the day!
