EDAMAME BEANS & NOODLE SALAD

EDAMAME BEANS & ORIENTAL SPICY NOODLE SALAD - serve hot or cold!


Serves 4

INGREDIENTS:

250g Noodles - soba noodles or wholewheat spaghetti can also be used

250g Edamame beans frozen

1 inch piece Fresh Ginger grated

Coriander finely chopped

1 Bunch of Spring onions (cut diagonally)

1 tsp red chilli flakes

4-5 whole dry red chillies

3 - 4 tbsp sesame seeds (dry roasted to bring out flavour)

1 tsp sugar

4 tbsp Soy sauce

1 tbsp Sesame seed oil


METHOD:

  1. Cook the noodles and edamame beans as per instructions and keep aside.

  2. In a wok add the sesame seed oil, ginger, spring onions (leave some for garnishing), red chillies, sugar, coriander and soya sauce

  3. Add the noodles and edamame beans and mix well.

  4. Can be served cold.

  5. When serving garnish with roasted sesame seeds, spring onions and coriander.
