Baked avocados as nutty as you like!

2-4 large ripe Avocados

50g finely chopped nuts of your choice (you can go as nutty as you like and add more or leave out the nuts if there are any allergies)

100g of Cheddar cheese (grated)

4 tbsp Parsley finely chopped

Green chilies finely chopped (optional)

2 large tomatoes finely chopped

Wholemeal breadcrumbs

2 - 4 tbs melted butter

Paprika as per taste

Salt to taste

Lemon juice

  1. Halve the avocados and remove the flesh from the skins gently. Brush lemon juice inside of the avocado skins.

  2. Dice the avocado and place in a bowl, add a drizzle of lemon juice, add nuts, cheese, parsley, tomato, green chilies, salt, and mix.

  3. Spoon the mixture into avocado shells, sprinkle breadcrumbs and drizzle the butter over the top, and lastly dust some paprika ontop.

  4. Bake in a pre-heated oven at 200 degrees for approx 15 mins.

  5. Serve hot with couscous salad as seen in the photo or with any salad/potatoes of your choice.
