Poori is an Indian deep-fat fried bread made from unleavened whole-wheat flour.
Makes approx 20
INGREDIENTS:
125G (1 cup) Chapatti flour
1 tbsp Soji /Semolina
2 tbsp Oil
Salt to taste
Water luke warm for making dough
Oil for deep-frying
METHOD:
In a bowl place the chapatti flour and soji. Add oil. salt and rub into the flour with your fingertips. Add water to bind and make a stiff dough, place a little oil on your hands and smooth over the dough.
Divide dough into equal pieces.
Drizzle a little oil on the rolling surface (I used a patlo) and roll out the puri 3 - 4 cm diameter not too thin as they will not puff up in frying.
Deep fry the poori in hot oil until light golden on both sides
Best served hot! Although in our family everyone likes them cold too with chai!
