This quick and easy raw salad recipe inspired by a trip to Bali. You can also serve it as a side like coleslaw. It has a fresh and tangy flavour of Granny Smith apple and fresh lime.
SERVES 4
INGREDIENTS:
2 small Turnips (purple ones)
1 small White radish (optional)
2 small Carrots
1 large Granny Smith apple
1 small Onion sliced finely
1/2 cup Parsley coarsely chopped
1- 2 Garlic cloves minced as per your taste
1 Green lime squeezed
Salt and freshly ground black pepper to taste
METHOD:
Peel the turnips, radish, carrots and apple. Use a food processor to shred.
In a bowl mix together the shredded vegetables, onions, parsley, garlic and the lime juice. Season with salt and pepper before serving.
This salad tastes best chilled.
