SHAHI PANEER & pEANUT ROLLS



Makes approx 8 rolls


INGREDIENTS FOR OUTER POTATO:


350gm Potatoes (boiled and mashed)

2 Bread slices (soak in water and squeeze out)

Salt to taste


INGREDIENTS FOR FILLING:


75gm Paneer crumbled

4-5 tbsp Coconut (fresh or dry)

4-5 tbsp Peanuts (roasted and crushed)

3-4 Green chilies chopped

1/2 tsp Garam masala

1/2 tsp Red chili powder

1 tbsp Ginger, garlic paste

Salt to taste

Oil for shallow frying


METHOD:


  1. Mix together the potatoes, bread slices, and salt.

  2. In a pan prepare the filling, add oil, and cook the ginger, garlic paste for 1 minute.

  3. Add the coconut, peanuts and stir for 2 minutes

  4. Now add the paneer, green chillies, garam masala, red chilli powder and salt. The filling is ready!

  5. Take a small ball of potato mixture and flatten it on your palm, place a little filling and you can cover by adding a small piece of flattened potato to this and then begin to roll between your palms.

  6. Shallow fry the rolls and serve hot with a chutney of your choice. I made coriander chutney to go with it. I also served with some pan-fried patra to make it a platter.
