Roasted Cauliflower salad- Middle Eastern twist

Roasted salad with spicy Tahini and Zaatar dressing.


1 Cauliflower cut into florets

1 Red Onion (chopped)

1 Garlic clove (chopped)

2 tbsp Olive oil

2 tsp Sesame seeds

Black pepper and salt to taste


125ml (1/2 cup) Tahini paste (sesame seed paste)

4 tbsp Lemon juice

4 tbsp Parsley (chopped)

2 tbsp Coriander (chopped)

2 Garlic cloves (chopped finely)

1 tsp Cumin powder

1-2 tsp Zaatar spice mix

1- 2 tsp Chilies chopped finely (as per your taste you can add more)

4 tbsp water (you may need to add more if paste starts to thicken)

Salt to taste

  1. Place the cauliflower and onions in a ovenproof dish, add olive oil, sesame seeds, salt, pepper and toss all together. Roast in a pre-heated oven 230 degrees for about 20 minutes, cauliflower must be browned and tender.

  2. Mix all the dressing ingredients together and set aside.

  3. Once the cauliflower is roasted toss it in the dressing. Place in the refrigerator for at least one hour before serving. Tastes delicious cold or room temperature.

  4. This is a meal in itself but you can serve as a side salad.
